Black Forest Cake with Amarena Cherries
Ingredients:
For the cake:
- 200g dark chocolate
- 4 eggs
- 150g sugar
- 150g flour
- 1 teaspoon baking powder
- A pinch of salt
- 100g melted butter
For the filling:
- 500ml heavy cream
- 50g powdered sugar
- 1 tablespoon kirsch (optional)
- 250g Amarena cherries (with some syrup)
Preparation:
Prepare the cake:
- Preheat the oven to 180°C. Grease and flour a 22 cm round cake pan.
- Melt the dark chocolate in a double boiler or microwave, then let it cool slightly.
- In a large bowl, whisk the eggs and sugar until the mixture is light and frothy.
- Add the flour, baking powder, salt, and melted chocolate, then gently mix until combined.
- Fold in the melted butter and stir until smooth.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a knife inserted comes out clean.
- Let the cake cool completely before removing from the pan and slicing into three even layers.
Prepare the cream:
- Whisk the cold heavy cream with the powdered sugar until stiff peaks form.
- If using kirsch, incorporate it into the whipped cream to infuse a subtle flavor.
Assembly:
- Place the first layer of cake on a serving platter. Lightly moisten it with some Amarena cherry syrup.
- Spread a generous layer of whipped cream over the cake, then top with a few Amarena cherries.
- Repeat with the remaining two layers of cake.
- Cover the entire cake with whipped cream and decorate the top with the remaining Amarena cherries.
- For an extra touch of elegance, sprinkle chocolate shavings on top.
Finishing:
- Let the Black Forest cake rest in the refrigerator for at least 2 hours before serving, allowing the flavors to meld and the cake to chill.
Chef’s Tip:
The Amarena cherry, with its sweet and slightly tart flavor, adds a delightful depth to this Black Forest cake. If you prefer a non-alcoholic version, you can substitute the kirsch with cherry syrup.
